Strawberry Orange Scones

These. Scones.


I almost don't know where to begin! They arrived after a summer of trying out a bunch of different scone flavors... even mandarine at one point, because it was all I had in the fridge. I am happy to report that these are going to become part of the weekend rotation for quite some time. Although I'm still working out some of the kinks with texture and shape (scone dough is a sticky MESS to work with), I am really happy with how these turned out - both in appearance and taste. I mean... am I the only one whose mouth is watering looking at that pic?! Let's hop to it..


INGREDIENTS for Scones

2 cups all purpose flour

1/4 cup granulated sugar (I used Morena pure cane sugar)

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon orange zest

1 stick unsalted butter (either frozen or cold), cut into cubes

1 large egg

1/2 cup cold heavy cream (may not need all of it)

3/4 cup fresh strawberries, diced (should be dried, not wet)

*Optional melted butter or heavy cream to brush on top


INGREDIENTS for Orange Glaze

2 tablespoons orange juice

1 cup powdered sugar

1 teaspoon orange zest

1 teaspoon vanilla extract (optional)


Preheat oven to 400 degrees.


First, mix together your dry ingredients (flour, sugar, salt, baking powder) with the orange zest. This helps work that citrus flavor into the dough. Next, make your scone dough by adding the cubed butter into the mix. Some people use a pastry cutter (I need to invest in one), but I just use my hands and have at it! Crumble the butter and flour mixture together until you have smaller sized pieces of the butter formed (think pea-size).


Beat the egg lightly with a fork and then add the heavy cream. When that is combined, add to the scone dough, stirring until combined.


Add the strawberries (dry to the touch) into the dough and fold together. It's ok if the strawberries streak a little - adds charm :) You just don't want the water from the strawberries to change the texture of your dough.


Lightly flour a counter or cutting board and form the dough into a circle, should be about an inch thick or so. Slice it like a pizza pie and place on a cookie sheet with parchment paper. You can brush heavy cream or melted butter on top, but I would only recommend a little so they don't get soggy and lose shape.


Bake for 15-17 minutes until slightly golden around the edges. I love that crispy on the outside, soft in the middle bake!


The glaze is the easiest part of this! Just add the ingredients together - orange juice, powdered sugar, orange zest, and optional vanilla extract for that sweetness - and drizzle over your baked scones.


Let cool for 5 minutes to help the glaze set OR just dig right in and go to town. These scones are bursting with fresh fruity flavors... so fruity it may even remind you of a childhood cereal... My boyfriend and I can FOR SURE taste Trix so you'll have to let me know what you think after you try this out.
